Oldiesmann: Finally got the AmazonBot situation under control. I basically changed some server settings to tell AmazonBot that it's not allowed to access anything on the site. That should fix the speed issues we've been experiencing lately

Crockpot Apple Juice Pulled Pork Recipe
This crockpot apple juice pulled pork is incredibly delicious and easy to make in the crockpot / slow cooker.

Equipment
Slow Cooker / Crockpot
Ingredients
1-2 tablespoons oil
one 3-4 pounds pork shoulder roast
1 red onion quartered
1 cup sweetened apple juice
2 tablespoons seeded whole grain mustard
1 tablespoon dijon mustard
1 tablespoon melted honey
1/2 teaspoon salt
Instructions
Heat the oil in a large skillet, then fry the roast until browned. Place in the bottom of a crockpot.
Place the onion around the roast. Whisk together the rest of the ingredients, then pour over the roast.
Cover with tinfoil, then place the lid on top. Cook all day on low, until the roast is falling apart and pulls apart easily.
Serve with the onions and a little bit of the sauce if wanted.
Notes
Feel free to adjust as needed.

Hearty Vegetable Soup Recipe

This hearty vegetable soup is packed with tender beef and veggies simmered in a flavorful broth. It's a simple and nourishing soup recipe ready in an under an hour!
Ingredients
1 teaspoon olive oil
1 small onion , diced
1 teaspoon minced garlic , more if desired
1 pound lean ground beef , or turkey
2-3 small potatoes , peeled and diced
1 cup chopped celery
1 cup chopped carrots
14.5 ounces rotel , or can of diced tomatoes and green chiles
15 ounces tomato sauce
1 ½ -2 cups water , more as needed (can also use broth)
1-2 Tablespoons balsamic vinegar
1-2 teaspoons chili powder , more or less to taste
1 teaspoon Kosher salt , more to taste
½ teaspoon ground black pepper , more to taste
For serving (optional): Fresh basil or parsley, parmesan cheese
Instructions
Brown ground beef. Heat the oil in a large pot over medium heat. Add the 1 small chopped onion and cook for 2 minutes. Stir in 1 teaspoon garlic and 1 pound ground beef and cook until browned. Drain any remaining fat. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper.
Add veggies. Stir in 2-3 small diced potatoes, 1 cup celery and 1 cup carrots, rotel, 1 can rotel and 1 can tomato sauce and 1 1/2 cups - 2 cups water (or broth). Bring to a light simmer and then stir in 1-2 Tablespoons balsamic vinegar, 1-2 teaspoons chili powder and remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Add more water or broth as needed, depending on preference.
Simmer. Reduce the heat to low and let simmer for about 30-45 minutes (or until the potatoes and carrots are fork tender), stirring occasionally. Add more water as needed. Salt and pepper to taste.
Top with fresh basil or parsley and parmesan if desired.
Notes
Vegetables: Feel free to add in a mix of different vegetables or omit the meat and add an extra cup of vegetables like bell peppers. You can also add vegetable broth to make the soup go further.
Storage: Store in a covered container in the refrigerator. It will stay fresh for 3 to 4 days in the fridge.
Freezer instructions: This soup also freezes great! Let cool and then place in a zip top bag and then lay flat in the freezer. Thaw over night and reheat on the stove top.

Apple Butter French Toast Bake

Andrew and his wife Elaine, are 4th-generation dairy farmers along the east coast of Ireland.

Ingredients

4 tbsp salted butter
1/2 Cup apple butter
4 fresh eggs
1 cup heavy cream
1 cup whole milk
2 tsp. vanilla
1 tbsp. cinnamon
1/4 tsp. salt
brioche loaf (16 oz.), cut into 1-inch cubes
powdered sugar and maple syrup for topping

Directions:

Heat oven to 350 F and grease a baking dish. Brown the butter and whisk with apple butter.
Then whisk in eggs, cream, milk, vanilla, cinnamon, and salt.

Add cube brioche to the dish. Pour the mixture over and gently toss to coat.

Bake 45 minutes until set. Dust with powdered sugar and drizzle with maple syrup. Serve warm.

1 tablespoon oil
1 lb beef stewing meat
1 small onion, finely diced
2 teaspoons minced garlic
1 teaspoon salt
1 teaspoon Italian seasoning
1/4 teaspoon black pepper
3 large carrots, peeled and chopped
2 ribs celery, chopped
1/2 cup pearl or pot barley, rinsed
2 tablespoons tomato paste
2 bay leaves
4 cups low sodium beef broth
fresh parsley for serving
US Customary – Metric


Instructions

Heat a large pan over medium-high heat. Add oil and let heat 1 minute.
Brown meat in batches (allowing space around each piece) medium-high heat. Remove from pan and place in a 4-6 quart slow cooker.
Add onions to the saute pan and cook over medium heat until translucent — they will pick up all the brown bits left by the meat! Stir in garlic, salt, Italian seasoning and pepper and cook 1 minute.
Add the onions to the slow cooker on top of the beef, along with the carrots, celery, barley, tomato paste and bay leaves. Stir well, and then stir in the beef broth.
Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until vegetables and barley are tender.
Stir in fresh parsley as desired and season to taste. Serve.
