Well I'm going to have Cooper tomorrow at 5:45 since Frankie has to be at work at 6 a.m. so I'm heading off to the haystack as soon as I finish here. 

PATRICIA, she does have someone who will be coming over 2 times a day and walking Cooper.  I think it's a relative of the couple who live in the apartment downstairs from her.  She's done it before so she can be trusted.  And I think the guy sometimes takes him down to his apartment.

I got a bit more packing done today and I got some winter stuff put away and some summer stuff out of boxes and into drawers.  And I have enough dinners frozen that I'll one a day until I leave and one left over for when I come home.  And the yard guy was here for the first time this summer and we made arrangements for while I'm gone and he did the yard for the first time this summer!  It looks good!

Tomorrow is another day!  I'm heading out of here and back the hall now.  I wish you all a peaceful night's sleep and a happy tomorrow!  And PLEASE come by tomorrow.  We miss you all!

Lemon Blueberry Donuts

Ingredients:

1 box lemon cake mix
1 can Sprite Zero
1 container blueberries

Preparation:

Heat oven to 350

Mix cake mix and Sprite Zero, it gets frothy

Spray donut pan with nonstick spray

Fill donut pan with Sprite/cake mix

Drop blueberries in all your donuts

Bake for 15 to 25 minutes, checking frequently-really depends on the size of your donut pans. Mine were mini, so it didn't take as long.

For every cup of real Mayo, add 1/4 cup apple cider vinegar. And 1/3 cup sugar

Have you ever had a dish that was so delicious, so comforting, that it transported you back to a simpler time? That's exactly what Mississippi Mud Potatoes do for me. This hearty and rich potato dish, layered with bacon, cheese, and a creamy sauce, reminds me of my childhood growing up in the South. I remember my grandma making a similar dish on Sunday afternoons, and the smells wafting from the kitchen would make our mouths water. It's a dish meant to be shared with loved ones, a dish that brings people together.
Now, as an adult, I still turn to Mississippi Mud Potatoes when I need a little comfort food. Whether it's after a long day at work or a rough week, this dish always hits the spot. And the best part? It's incredibly easy to make! A few simple ingredients, some basic knife skills, and a bit of time in the oven, and you have a dish that tastes like it's been cooking all day. Trust me, this is one recipe you'll want to save and make over and over again.
Mississippi Mud Potatoes Recipe:
Ingredients:
- 6 cups potatoes, cubed
- 1 pound of bacon, cooked and crumbled
- 2 cups of shredded cheddar cheese
- 1 cup of mayo  (I am going to use cream of mushroom soup undiluted instead of mayo)
- Salt and pepper, to taste
Instructions:
1. Preheat oven to 375°F.
2. Mix all the ingredients together and spread out in greased 9x13 inch baking dish.
3. Cover dish with foil and bake for 45 minutes.
4. Remove foil and bake for an additional 15-20 minutes, or until potatoes are tender and cheese is bubbly and golden brown.
5. Let cool for a few minutes before serving.
6. Garnish with chopped green onions, if desired.
Enjoy this delicious and comforting dish with your loved ones!

Good morning, 42 degrees at nine forty and a sunny day out there. Nothing planned today other than staying in as I'm waiting on two packages for a neighbor who had an appointment today.

The snow is almost totally gone, It's reached the stage where people spread the bits out, so it melts faster. My meet and greets are fine and Farrah has taken to laying about on her back with all four paws in the air, when she's not kibble nibbling, so she's fine.

I only have watering plants and kitty litter today, so other than package wrangling, it's another lazy day.

Amy, I don't recall any cats with my Colorado grandparents, but there were several barn cats at my Missourian grandparents. Missouri was hogs and corn with a cow or two and in Colorado it was grain, milk cows, a mule, and crops. Or at least as I remember them.

Jane, you will be all ready at the end of the month for travel, I'm hoping that you and Callie get to visit this time. Does Frankie have a Cooper substitute nanny arranged?

I survived the week of two doc appts in different directions.  Mammo was fine...and I've "aged out" of having any more mammos if I want to do that.  I DID! 

The second doc was my rheumatologist...and he says my pain is fibromyalgia and osteoarthritis.  I go back in Aug for my prolia shot.

Finally today is a sunny day...though chilly in the 40s.  I stopped by my HVAC place and Al came right out and fixed a heater in my back area.  He'll come back when temps get to 70s to fix my AC in the bedroom.  He's bought into the company...but he really liked Ray...and he treats me very well.
