Roasted Chicken With Lemon-Garlic Green Beans

Looking for a new spin on classic baked chicken and green beans? This recipe will do the trick.

Hands On Time: 15 mins Total Time: 1 hr 15 mins Yield: 4

Talk about a one-pan wonder. This hearty dinner comes together in a single casserole dish or cast-iron skillet. After a 15-minute prep job (tossing potatoes, green beans, and chicken with olive oil and lemon juice), the meal roasts in the oven for an hour.

As this dish cooks in the oven, the chicken and potatoes soak up the garlic-citrus sauce. And, aside from a mixing bowl, cutting board, and roasting pan, there's minimal cleanup.

Ingredients:

    6 tablespoons olive oil

    2 lemons, 1 thinly sliced, 1 juiced

    4 cloves garlic, minced

    1 teaspoon kosher salt

    ½ teaspoon freshly ground black pepper

    ¾ pound trimmed green beans

    8 small red potatoes, quartered

    4 chicken breasts (bones left in, with skin, about 3¼ pounds)

Directions:

    Preheat oven to 450 °F. Coat a large baking dish or cast-iron skillet with 1 tablespoon of olive oil. Arrange the lemon slices in a single layer in the bottom of the dish or skillet.

    In a large bowl, combine the remaining oil, lemon juice, garlic, salt, and pepper; add the green beans and toss to coat. Using a slotted spoon or tongs, remove the green beans and arrange them on top of the lemon slices.

    Add the potatoes to the same olive-oil mixture and toss to coat. Using a slotted spoon or tongs, arrange the potatoes along the inside edge of the dish or skillet on top of the green beans.

    Place the chicken in the same bowl with the olive-oil mixture and coat thoroughly. Place the chicken, skin-side up, in the dish or skillet. Pour any of the remaining olive-oil mixture over the chicken.

    Roast for 50 minutes. Remove the chicken from the dish or skillet. Place the beans and potatoes back in oven for 10 minutes more or until the potatoes are tender.

    Place a chicken breast on each of 4 serving plates; divide the green beans and potatoes equally. Serve warm.

Reviews:

I use skinless boneless chicken breasts, sliced in half, sliced mushrooms, red & Yukon Gold potatoes. In the lemon mixture I added some fresh dill. Sprinkle with paprika and last 2-4 mins brown under the broiler. To save clean up time....line your baking dish/pan with foil. Vary the veggies...I have added sweet potatoes, zucchini, carrots, red peppers.

We made this tonight and the lemon was waaaaaaay over powering and the zest from the lemon ruin the taste of the beans and potatoes. I recommend to mix a little lemon with your oil but DO NOT put the lemon slices in the pan and cook with your meal!!

I made this last night and my entire family LOVED it. I added extra green beans and potatoes since my family eats a lot and I added a bit of extra salt and pepper. I used seven or eight bone-in chicken thighs instead of breasts since the thighs were on sale. As soon as my boyfriend took his first bite, he immediately requested that I make it again! The only thing I will change next time is to add a bit less olive oil.

Good Morning Anyone and Everyone!  It's been a busy morning so far.  Cooper has arrived, had his walk and his breakfast, some loving up and now is sleeping.  I need to get a shower and get ready for another dr. appt.  This one is for my feet and it's a new dr. so I'm hoping he has some answers.  We shall see@

I don't think I'll get around to the kitchen freezer today but I'm thinking about it.  Tomorrow sounds like a possibility!  Wish me luch!

MG you're getting things done and it sounds like the kitties have made the new place home!  And it sounds like you're getting around to making it HOME, too!  Keep up the good work!

I slept with the bedroom window open last night.  And I didn't put the comforter back on the bed.  And I didn't freeze!  Spring is truly here!    Now I better get back to work or I won't be ready when Cathy comes to pick me up for the dr. appt.  I wish you all a good day....better than yesterday but not as good as tomorrow!  And don't forget to stop by for a visit with us.  We miss you when you don't come!

Good sunny morning to you all!

Yesterday we got up to around 80o. I opened a window and the patio door for a nice breeze and to listen to all the birds chirping away, as well as to air the apartment out a little. Today it will not be quite so warm. Still, 76o is plenty warm and near record for today.

I've been relaxing more this last few days now that it is close to settlement. The cats got a new, albeit smaller, piece of cat furniture. Oscar has taken advantage of the top perch to sleep in the sun and check out what goes on outside. I wish the perch was a little bit longer. It is almost too small for him. Shan has not tried the perch; he has used the little "hovel at the base. He prefers to live dangerously (for me or him?), liking to nap just behind my chair or under the rocker.

As much as stuff as I have gotten rid of before the move, there are still more things I am finding that don't "fit" the apartment or, as it turns out, I don't need. Also, there are some things I want/need to get that make a better fit in the apartment. My current list includes a new 8" frying pan, a nightstand or the like that has a deepish drawer for odds and ends that lost their homes when I moved. a floor lamp or corner bookshelf with lamp, and a console table or buffet to fit behind the sofa.

Yesterday, I made myself a nice pot of chili using ground bison. Actually, I wanted to make barbeque, but it dawned on my that I never got the hamburger buns that I ordered last week. The grocery was out and did not substitute. So, chili is was. I have to add cumin and chili to my grocery list. I must have tossed the old cumin and I should have tossed the chili powder. I don't usually put a lot into my chili, but I added extra this time and still did not really taste it.

Also kitchen-wise, I discovered that I can indeed reach the top cabinet shelf with my little step stool. I can also manage to get my baskets up on top of the cabinets. Most of my small wicker "vases" are on top of the large cedar cabinet in the foyer. They will stay there as they look great interspersed among the fake greenery.

This morning I got introduced to Hanan al-Shaykh (Beirut Blues and Women of Sand and Myrrh), Bolu Babalola, (Love in Color, short stories), Aoko Matsuda, (Where the Wild Ladies Are, short stories), and Sara Nisha Adams (The Reading List) . Several weeks ago I added Jack Kerouac (Dr. Sax), Tan Twan Eng (The House of Doors) and Neal Gaiman (American Gods).

Good morning..

Grass crunched underfoot this morning ,temp is only 26° with a calling of high winds!

Work around home today, lots to do...some may get done. :)

Atta girl JANE!!! Keep up the good work!! I know how happy we were when Kyle's visits went from 4 -6 -12 months!!! The best is when you have the 5 years in and the Dr says I don't want to see you anymore. :nanadance:  :nanadance2:
