Mars - Thank you of posting all three videos for Memorial Day. The second one, a tribute to WWII Veterans, was beautiful and very moving. It brought back long ago memories of my father in his Navy uniform. The young woman who sang the solo has such a lovely voice. Overall, it was a perfect presentation.

These sun-dried tomato and feta egg bites are the ideal grab-and-go breakfast, with each bite filled with tangy sun-dried tomatoes and briny feta cheese encased in a creamy egg custard.
Elevate them to dinner status by adding a little grated garlic and finely chopped fresh herbs for an extra savory twist. After baking, stash these flavorful bites in your fridge or freezer for future meals.

Active Time: 15 mins Total Time: 40 mins Servings: 6
Ingredients:
8 large eggs
1/3 cup whole milk
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon ground pepper
1/4 teaspoon salt
3/4 cup crumbled feta cheese
2/3 cup chopped oil-packed sun-dried tomatoes, drained
1/3 cup chopped scallions
Directions:
Preheat oven to 350°F. Coat a 12-cup muffin tin with cooking spray.
Whisk eggs, milk, oregano, garlic powder, pepper and salt together in a large bowl until well combined and frothy, Fold in feta, sun-dried tomatoes and scallions until combined.
Divide the mixture among the prepared muffin cups, about 1/3 cup each. Bake until puffed, set and golden, 16 to 18 minutes. (The egg bites will deflate once removed from the oven.) Let cool in the pan for 5 minutes before serving.
To make ahead:
Refrigerate in an airtight container for up to 3 days. Reheat in the microwave on High for 30 seconds. For a crisper texture, broil 8 inches from heat source until crispy and lightly golden brown, about 3 minutes.

12-cup muffin tin

Sandy - So good to see your message! Sounds like you're doing well, and enjoying your arts and crafts hobby. Gelli printing is a new one on me too! Sounds like fun. If you do any prints, take some pictures so we can see what it looks like?
Mars - I haven't yet looked at your Wikipedia link on Gelli, but will check it out after I finish here. I'm enjoying looking at the Pier23 cam you posted and I found an even better one at Pier39! The Sea Lion platforms there, were loaded yesterday. I'll enclose the link in my next post.
MaryPage - I enjoyed reading about Mateo and Bella, and well remember in the past, when you were keeping us informed about Bella's fabulous trip! I like being brought up-to-date on both of them, as well as others in your family.

Good morning, only 50 presently with rain and drizzle to continue overnight, and possibly into the weekend.
MG, our black glacial soil must be acidic as we have all those plants and trees you mentioned. We live in a huge boreal forest that spans most of the state's Interior. When I attempted to discover its size, I found something very interesting, or at least it was for me.
"The boreal zone is a broad belt of forest that spans the top of the world covering vast expanses in Canada, Alaska, Northern Europe and Russia. In Alaska, the boreal forest is found in the interior lands between the Brooks Range, north of Fairbanks to the Chugach Range outside of Anchorage. Because of the northerly latitude the growing season is short and the winters are long with snow cover that lasts several months. The best place to experience the boreal forest is a drive from Anchorage to Talkeenta, Denali or Fairbanks and exploring some of the trails along the way."
