What Are Mud Hen Bars?
It's hard to pin down the origins of the original recipe for mud hen bars, but they're widely believed to have been created in the South or Midwest in the 1940s or 1950s. Variations of the recipe are often found in church and potluck cookbooks. Mud hen bars are made up of three layers: a blondie-style base layer, a middle layer made with chocolate chips, and a meringue topping. The finished bars are sweet and buttery with just the right amount of crunch from the toasted top crust.
Ingredients:
Nonstick cooking spray
4 eggs
1/2 cup salted butter, softened
1 cup granulated sugar
1 tsp. baking powder
1/2 tsp. salt
1 1/2 tsp. vanilla
1 1/2 cups all-purpose flour
1 cup bittersweet chocolate chips
1 cup miniature marshmallows
1/2 cup chopped pecans, toasted (optional)
1 cup packed brown sugar
Directions:
Step 1: Prep Pan. Preheat oven to 350°F. Lightly coat a 13x9-inch baking pan with cooking spray.
Step 2: Prep eggs. Separate two of the eggs, placing 2 egg whites in a clean medium bowl.
Step 3: Mix Ingredients. In a large bowl beat butter with an electric mixer on medium 30 seconds. Add granulated sugar, baking powder, and salt. Beat until fluffy. Beat in 2 whole eggs, the 2 egg yolks and 1 tsp. vanilla until smooth. Beat flour into butter mixture on low until just combined.
Step 4: Layer into Pan. Transfer mixture to prepared pan and spread to an even layer. Top with chocolate chips, mini marshmallows, and pecans (if using)
Step 5: Make Topping. Beat the remaining 2 egg whites on high until stiff peaks form, about 2 minutes. Fold in brown sugar and remaining 1/2 tsp. vanilla until combined and there are no lumps. Spread on top of chocolate chip layer.
Step 6: Bake and Cool. Bake 20 minutes or until top is golden brown. Let cool completely on a wire rack before cutting into squares

Good morning, Last night the rains came and will occur off and on until July first. It's 61 presently with an expected high of 70.
Many of the larger fires, such as the Gilmore Trail one on the edge of town, have stopped their forward movement, but we'll need more of the steady rain to demobilize it.
The people cutting into the wall, exposing pipes, have been at it since eight, and it looks as if my apartment will be up in the second week of July.

I was finally able to get in some news about that yesterday. I've been praying for them.
Finished my wood cutting for the morning. Now I need to find something less strenuous to do.

I'm joining you after my morning's wood cutting. I wanted to get it done while it was cooler. Our high today is 76°F, not hot, if I'm not doing manual labor. I over heat myself🥵. It will be 90°F next week. I'm not looking forward to it. Glad you all have A/C! I have A/C, on solars. In the RV, its loud!!! I've been looking at a mini split for the tiny house. They're supposed to be quieter.

Things have quieted down in the Middle East. No missiles flying back and forth since yesterday, so looks like The Twelve Day War, is over. Hoping we hear from Bubble soon, and praying that the news will be good! Photos from the devastation in cities across Israel look bad.
Also hope those of you who are suffering from the massive heat wave on the East Coast, will get some relief today . . . and that the power outages in PA, have been taken care of?
That wonderful fresh brewed coffee smell has drifted back here to the computer, so time for my first cup! Hoping everyone has nice day today.
