Larry, I am interested in the baked onion with butter and cheese.  How long do you cook it?  Can it be done in the microwave?  Does cooking caramelize it?  Or is it just soft.  My dad used to fix creamed onions for holidays and I have done that too.  I fixed them for Christmas a few years and I think Norm, Dot and I were the only ones who ate them.  Others turned up their noses without even trying them!  I don't eat too much of any one thing to bother me - whether natural or processed.

We get Vidalia onion here.  I don't eat them like apples, as I understand some people do, I do eat them raw in salads or on hamburgers and probably in other ways.

I am another one who uses a mouse with my laptop.  I disengaged the touch pad but if I remove the mouse, the touch pad works, then when I put the mouse back the touch pad is again disabled.

My Random Image to the left shows Sun - I wonder how she is doing.

Bubble, I'm not against a recipe folder, but many recipes are posted in the What's for Dinner folder - would a recipe folder do away with that one?  If I were to post a recipe, that is where I would post it now.

Lloyd Hammond

hello everyone. Nancy said she dose not have  a recipe for zucchini relish , but she thinks it would be about same as for pickle relish. have a good day. president just left kc Mo, some people gave up to $2,000 to set and eat with him. fool and there money to soon part. they talked about having to have a security Clarence to do that. I had the highest Clarence was available when i was in the service. i could go any where on white sands MR and fort bliss holamin ab. i to the best of my knowlage have not done any thing to mes it up so guess i still could. would not pay to see or set by him. I mingled with some very high ranking officers while on duty. did not make me have a swelled head either.

Mary Ann not speaking for Larry but here is a recipe  what is called a bumming onion. you nip the roots and the top off just barley on the roots. then set it down on the root end and cut down not quite through it in a star patern, spread it out deep fry it in a deep fryer cooker. fill it with butter salt and pepper to taste. i think it is very good, but as i say i am on a sea food diet, see food and eat it.best a vidila onion

Lloyd

roley

Larry. That was one's weekly ration, sometime perhaps a heavy worker had a few extra 'oz's' added on, my Grandfather used to go rabbiting, along with many others, that helped to stretch the meat ration, everyone kept a chicken or two, that also helped, summer months we also , if we could, pick the wild fruit, but that was risky, in those early days, the fields behind us were mined, the shore line in front of us was also mined, we used to hope the Canadian soldiers on manoeuvres would kill the odd rabbit, if we got one, that would also 'go in the pot' !, we were lucky, this was a very rural area at that time, in the towns or city there was always a market, where things, for a price, would suddenly appear !, lol..

JaneS

BUBBLE, I'll put my "2cents worth" in about the recipe discussion.  In the old Senior Net, there was such a board.  If you had a recipe to share you could post it for everyone or anyone to try.  Here, we have a "What's For Dinner" folder and recipes appear there sometimes when people ask.  However, the difficulty seems to be in actually finding a repipe that's been posted.

In the old folder, they had some kind of a list and I'm sorry, I don't remember how it was set up...maybe alphabetically...may sorted into dinners, desserts, etc.

I'm in favor of this type of discussion but I'm only one person.

Lloyd, thank  you.  I saved your instructions.  Larry had mentioned a "baked" onion and your recipe calls for deep fried.  I'd prefer "baked" but I don't rule anything out.

Wishing all a Terrific Tuesday..  (ya got me the other day, Callie)...  :P  ;)

Hope this means we can't talk about cooking in here, Bubble?  I don't go for recipes often but more like "tips".... and the only 2 places I visit regularly is this one & Photos.  BUT.... I go along with everyone. I will probably slip & mention food now & then in here anyway!  I get off track in Photos & have to remind me where I am.   :crazy2:

I've run sprinklers in the front, filled the pool to needed level (dry air & wind makes it evaporate), one load of clothes in the dryer & now off to the store.... that darn hamburger is going to become a pot of chili & pot of spaghetti... need something to create both.  Yesterday I treated myself to a T-bone steak.... they were on a one day sale at the store so a thick & perfect one that was originally nearly $30. was $15. It had a big "tenderloin" part that filled me to overfull the first meal... I pan fried the whole thing in a cast iron skillet and with the brownings & flavor, I cut into bite size pieces the rest of the meat & cooked slowly to melt in the mouth... in it's own gravy.  There is more than enough for 2 more meals so not so outrageously expensive for a $15. piece of meat to make 3 or 4 tasty meals.  I baked a potato for the first meal but gravy calls for mashed potatoes, don't you agree? So here I am, talking about food again.  :( ::)

When Cas was alive he often wanted me to get "carry out" after seeing something on TV..... we tried the cactus flower (big onion deep fat fried at Texas Roadhouse).  We usually ordered a smokehouse burger & pulled pork sandwich & cut both in half, they came with choice of steak fries or baked sweet potato, so we ordered both & shared. I keep styro coolers in the trunk & can be home in aout 15 minutes so food plenty warm.  The cactus flower was a total failure for take out.... it was just a greasy blob by the time we started on it, never tried it again.

Guess I'd better eat before going to the store or my cart will be extra full, right?

Mary Ann, I don't want to disable my mouse because when #1 son comes to fix or show me something, he uses the pad. I can manage very slowly with the pad, but not to copy & paste or other things.

Peter, sure sounds like a small amount of rations.... was that per person or family?  I remember some neighbors wanting us to share sugar stamps with them because my 2 oldest brothers didn't go into the service until the last year of the way so 5 kids & 2 adults got us more than most. My mother's brothers had farms so we could get meat now & then from them. Dad hunted & fished & we also had chickens to eat & for eggs.  Once my brothers went into the service Mother would mail them packages every week with cookies or something special to eat.  They both said their buddies watched for her boxes!

I've rambled on way too long... better get busy!

Mary Ann

Shirley, my touch pad is disabled, but when/if I pull the USB connection from the computer, the touch pad is operable.  Plug the mouse in again and the touch pad is disabled.  Try it and if it doesn't work, enable the touch pad again.  The cursor moving all over the place and having my text moved drove me nuts.

June Drabek

You folks keep so busy, you make me feel like a lazy old woman. I won't contribute one way or the other for recipe folder as I no longer cook. When I sold my home, I disposed of all my cook books and years of recipes. I had some excellent ones from my Polish MIL.....so tasty, but hours of labor. Kolacki was my favorite.

We are having another hot day 92/71 .So my conditioner is set at 82 and that keeps me comfortable since I do so little physical labor. I plan to go down for lunch, then home for book and bed. I will do several walks in the hallways, just to keep the heart working and the blood flowing. I have already done my early morning workout..massage and exercise which takes close to an hour. All done while still flat on my back in bed. I feel the massage I give my arms and legs have really helped to contain the peripheral artery disease. I exercise my toes many times during the day, because I go barefoot in my apartment. Just bending them down and up helps the blood flow. I just won't give up, I want to enjoy every day as long as God keeps giving me a new day to enjoy and people to Love. I'm so glad I have all of you. Hugs and more hugs, and Love. June

As long as we are here, let's dance.

Mary Ann

Amy, someone (not you) had too much time on their hands!  Those were fun to read.

June, you do more exercise than I do, although I usually walk to the mailbox.  Tom did it today because we went for lunch and he took my absentee ballot to the mailbox for me and brought back the mail which had already been delivered.  We lunched at the Cannonsburg Deli where we both had humongous sandwiches.

My a/c is set at 78 degrees and if things seem too humid, I'll put it down to 77, but that usually is a bit cool.  I was told when working in an appliance department that the thermostat should be set at four degrees lower than what the outside temperature was and when we are in the mid-80s outside, 78 seems to work.

Mary Ann

JaneS

Hello Everyfriend!  JUNE, you are just as active in your own way as any of us are in ours.  I'm not sure that if I make it to 93/94 I'll be as active as any of you 90+ ladies are.  I'll probably just sit in my rocking chair and think about what I might do when I get some energy.

Today, I made some cucumbers and onions like my grandmother used to make but I think I already told you that.  I'd just finished dealing with that and packed up the things my daughter left here for my son and had them ready to take.  I'd already made scalloped potatoes from the potatoes that she brought for me and got my zucchini casserole ready for later in the week when there was a knock at my back door.  It was my good neighbor asking if I'd like a couple tomatoes and a couple burpless cucumbers.  And I'm off again!

Tonight for supper, I had the rest of the water buffalo sausage from Sunday breakfast, scalloped potatoes (fresh out of the garden), and corn from the farm stand.  What a great supper!  Leftovers in the hidey hole!

Now I'm sort of planning to watch a little TV (hopefull with my eyes open) and then go to bed early.  Tomorrow is a work day.

I did go out for a bit.  I took my trash to the dumpster, dropped off my son's garden goodies from his sister, got to pet their new puppy and got a couple of hugs from Kiran.  She was puppy watching!  Puppy's an Alaskan Malemute and isn't housebroken yet.

Then I went to the farm stand that has a discount on Tues. for Seniors but it had just closed due to bad weather and flood warnings.  So I went to another farm market that's open all year.  They serve as an outlet for local farmers and they had so much good stuff I had a hard time making up my mind.

I suppose this is long enough so I'll "shet ma mouf" and go do something.  Enjoy what's left of your day, Everyfriend.

Denver

Crazy rain and lots of thunder and lightening again tonight here.  My phone went off warning of winds and flooding in the area.  It was not too bad, and seems to be over for the night.

LARRY, Kurt and the boys did make it to Vail safe and sound.  Thank you for asking.

I had a text from Dr. Dave last night and again this morning saying they were safe and sound.  I know they did get rain and lightening last night as well as tonight again.  It appears we will have storms every night this whole week.

I would love to have a recipe folder, BUBBLE.  I am always interested in new recipes to try.

That T-Bone sure sounded yummy, SHIRLEY.  I always pick a T-Bone or Portehouse that has the largest tenderloin and I always eat it first!  Some like to save the best for last.....NOT me!

AMY, glad your neighbor wanted your van.  Sometimes it is hard to part with a good vehicle, but if it is no longer needed it is best to part with it.  Points to ponder was enjoyed by me......thank you.

My dad continues to do great.  The PT had him walking with a cane today.  He sounds great and I sure am happy to not have worry about him as much.

JANE, I sure would like to share your cucumber and onions....I must make that very soon.

We do get Vadalia Onions here every year and I love them.  I am not fond of the deep fried whole onions as they always seem to hold too much oil.  I would like to try one baked though.

Oh my, I had a distraction and forgot that I did not finish this and post.....thank goodness it is still here.

Pleasant dreams to all,

Jenny

Shirley, no restriction on what is posted here - ever!
But I think many agreed that it would be convenient to have the recipes grouped together in one place, it would be easier to find them again. I would suggest putting the name of each on the subject line of the post, so as not to need opening all the posts.
That new cooking recipes discussion would go in the "Homemaking, Food & Gardening" section of course.

Amy

Good morning everyone.

We had heavy rain last night just before I went to bed and now just a misty rain. Fire ban is still on and grass is still crunchy under foot.

Yesterday was busy with trips to town and back, vehicle needs a e-brake and they had to order out for that. Should be ready for pick up today . We can bring the snow tires in as they will go with the van too.

I hope not a lot on today other than chasing those darn dust bunnies, one can coral them up but they soon get loose!

June, you are a blessing to this site and as others have said if we are that busy and active in our 90's we will be lucky!!

Jenny, that is great news on all accounts especially your Dad. Glad to read he is progressing  and not looking back.

Jane, your supper sounded interesting. Does water buffalo taste like beef??My Dad liked onions, cucumbers and green peppers in vinegar.
Sweet puppy ,any photos and what did they call him/her?

MaryAnn, I agree too much time on their hands. I had a phone call the other night telling me  my computer was full of viruses , they too have too much time on their hands. I just wish they would get caught.

Shirley, I love hearing what others make and the different ways they are preparing the food. We just finished up a Cabbage Roll casserole and it seemed it tasted better as it aged....about 3 days :) So easy to do it this way too.

Larry, I agree with you on the natural foods better than processed. We just have to remember moderation.  At the moment the rain is pounding down again...love the sound .

Gloria, hope you are well......like you I really don't care for this heat and humidity. Neither do the dogs!

Better get a move on here

Enjoy your day everyone..

JaneS

Good Morning Everyfriend!  Two things before i forget them again...

JENNY, I'm so happy to hear that your father is doing well.  It must have eased your mind to see for yourself and spend some time with him.  God answers our prayers!

LARRY, the produce department in MY Walmart seems to have Vidalia onions year round.  I'm not sure where they get them but there they are!

We are in for another rainy day with temps remaining in the high 70 and low 80s.  The temps I like.  The rain, I've had enough of.  There are warnings of flash floods very nearby although I didn't see any on my travels yesterday.

I'll be off to Wally World to greet my public this morning.  I'm praying for shorter registers but sometimes it's not possible.  We do what we must.

The doggies got up at their usual time this morning but after their pill, I hit the couch to wait for the boing.  It went off; I shut it off and they let me have another 20 minutes until my alarm went off.  So I'm beginning this day more rested than usual.  Wish me smiles!

I wish you all a lovely day full of whatever pleases you most.  Take the day and make it yours!

Click for Lewisburg,Pennsylvania Forecast

Shirley

Bubble, before I forget (this is the day that "forget" is going to win)... I totally agree that recipes should have a special place so people can find them easier than trying to "scroll back" to where someone posted one in here.  I actually thought there was a place like that but since I never seem to have time to go there, I'm not a reliable voter~~  I wanted to get out early to vac the pool, put the rest of that brush in the dumpster, not sure I can get it all in but most.... mower comes tomorrow so must get ready for him.  Then, because I never did get that chili & spaghetti made yesterday, must do that as soon as "outside" is taken care of.  What I'd really like to do is crawl back in bed for a few more zzzzzzzzzzzs.  Sure wish I could find a nice couple to help get me out of this house/yard mess, maybe I could keep up.  This is not a place for a little old lady to maintain without help.  Cool weather would make every job easier, too (are you listening, Mother Nature?)

Mary Ann, you are right, one mouse plugs into a USB port & the others are "wireless" but have a "dongle" that plugs into a port...all I need do is pull the plug, like you said... duh....  ::)

Jenny, so glad your father continues doing so well... probably the difference is he isn't living alone like my father was.  Having someone to talk to all the time is a real blessing.  I tried to talk Dad into getting a dog (like he always had), but he didn't want to worry about one since his yard was not fenced. Such a treat to hear about how spunky your father is... must be where you got "it".

ONWARD!

larryhanna

Hi Everyone. There are storms predicted for our area today but they may miss us as they did yesterday.  It is to be another day in the 80's.  The only thing on the schedule for today is we plan on going out for our main meal around lunch time and then Scott plans on coming over this evening for a couple of hours.  I just finished fixing Pat's breakfast and had already emptied the dish washer.  I also folded up some kitchen towels and other related type items.  Other than fill my pill boxes for 2 weeks and take out the trash a little later I don't really have much else I expect to do today. Yesterday was just a nice quiet day of rest.

Mary Ann, I don't think Pat had a recipe for baked onions but basically used a whole onion peeled and but a hole in the middle to hold some butter and cheese.  I don't remember whether she used any other spices.  I tried to find a recipe like what she made but didn't find any but there are many recipes available online for baked onions.  I don't remember it being caramelized but cooked enough so the onion was soft to cut.  I just like Vidalia onions on sandwiches and don't them them along unless they are part of a cucumber/onion mixture.  I wish Sun could just pop in and say hi or her daughter would do so as we hate to loose touch with folks who has posted here.

Lloyd, I looked up how long security clearances stay in effect and found the following answer:  A government security clearance requires a periodic reinvestigation every 15 years for a “confidential” clearance, every 10 years for “secret,” and every 5 years for “top secret.” When a clearance is inactivated (because of switching jobs or leaving the military), it can be fairly easy to reinstate within the first 24 months, as long as that falls within the periodic reinvestigation window. When I worked for the General Accounting Office many years ago I had to have a Top Secret clearance and remember the neighbors where I grew up were concerned that someone was coming around asking questions about me.

roley, I don't remember my folks talking much about rationing and since we lived on a farm and had our own beef and pork and a large garden I am not sure how much they were impacted  for food by it except for things like sugar and flour.  I am sure they were impacted in other areas like tires and fuel.  I remember they had some little plastic tokens called mills or something similar. You obviously have many memories of those war years with your country being attached.

Jane, as I recall I made the indexes for the recipes and they were alphabetical by type of dish such a meats or desserts.  That was a long time ago.  There was a link to the index like a discussion but the file was saved in a different place on the server than the individual discussions.  If this type of discussion becomes popular here I might try to come up with an Index and maintain it. I will have to check at our Walmart as they probably also stock the Vidalia onions.  Since we are getting most of the groceries from Walmart via the online ordering I don't spend much time in the produce department.

Sandy, always good to see a posting that says "all is well".

Shirley, food is a big part of my day and even though I am not a cook I still am interested in food and realize that one day I may have to take over cooking as it is very painful for Pat to be on her feet for more than a few minutes.  I can't remember the last time I had a T-bone steak. I used to watch Food Channel a lot but seldom do anymore as really enjoyed the cooks rather than the chefs or watching someone order in a restaurant and then eat.

Amy, I liked the "Points to Ponder" although as Mary Ann said I think someone had too much time on their hands.  :)  Pat has made the Cabbage Roll casserole in the past and sometimes just fixed cabbage in the skillet with butter and it was good. I agree that moderation is the key on what we eat.  Sometimes I am not too good with that step.

June, Pat no longer uses  a cook book but just prints out a recipe she has found on the Internet.  We are glad we have you also and you know you are loved by your family and your many friends whether personally or online.

Jane, it sounds like you had a very busy day yesterday.  I hope you have a good day at work today and it doesn't tire you too much.

Jenny, nice that your boys keep you advised of their safe travels and camping experiences.  I hope you don't get flooding with the heavy rains.  I am going to have to look back as I don't remember Bubble mentioning the recipe folder and perhaps she would do the index.  It sounds like your dad is doing very well in his PT.

Bubble, I remember the recipe discussion got a lot of activity in SN.  I agree that each recipe should be put in a separate posting that was an index would work better.  If this become and active discussion I will coordinate with you about how we want to do an index.

so_P_bubble

so_P_bubble

Good point about an index, Larry.  I hope you can organize that  :)

Any good recipe to share?

Mary Ann

Larry, I looked up Baked Onion recipes and there are recipes galore!  Most are more complicated than yours, some took 1 1/2 hours from start to finish.  I wonder if it could be baked in the microwave and I will check because I have a couple of microwave cookbooks.  I may try one anyway and if it is any good, I'll let you know.  I think with butter, if cooked long enough, it would caramelize anyway.

I tried to finish my sandwich of yesterday but I was not hungry so I will finish it for lunch.

We are headed for another warm day today.  I was sure I heard rain in the night, but the rain on radar is so far east that I doubt it.  Maybe my loveseat is dry now so I can sit on it.

We had ration books during WW II and I think I have one yet.  I also may have a red token for what I don't know, but it is a ration thing.  I think we didn't use much sugar, since we had three books (Dad, Norm and me).  I think we did not suffer from lack of anything.  Yes, we had shoe rationing too.  Probably Norm would have worn out shoes because he was 13 in 1942 when rationing would have started in the US.  I have an old bus token somewhere from when our bus tokens were 12 for $1.  I don't ride the bus anymore but I know the cost is a lot more than 10c.

Gloria

Good morning everyone. Well Cox was off  again. Went to turn to Jepardy at 8 last night and got a black screen. No PC or phone either. Finally came on this morning about 10:55. Glad I have a cell phone too incase I had to call out.

JANE  on the news yesterday they showed the flooding in Pa. Looks like the southeast has had way too much rain and in the west too many fires from no rain. Ny daughter has been making zuchini relish for years and I had some and it is very good. My #1 son has too many zucchini this year and my grandson asked my daughter for her recipe. My daughtwer has an easy pickle recipe, with onions in it too. I made it a few times but wit h only 1 small slice of onion.

AMY  never heard of zzucchini marmalade. Oldest son is the only on in the  family who liks marmalade. Would you send me that recipe, I think he would make it. My DIL is not the one who does any canning. Thanks for t hose points to ponder.

BUBBLE  wish I was still able to do canning. I used to do so much of it  and appreciated all that work in the winter months.

JUNE  like you I can no longer cook. What little I do is not from recipes.

JANE  would you share the zucchini casserole with me? Could have a CNA make it for me and my son yesterday asked how many I wanted.

JENNY  like you I will pick  porterhousei that has as big as I can find. Eat the tenderloin first. Glad your Dad is doing so good.

AMY  I am OK as long as I have my AC running. If I didn't have one with all the humidity have no idea how I would survive.

My CNA is here and will not stop talking. Will you to get back later.

Got home from work...one busy register, one not so busy...and had lunch, fed the doggies a snack and took a little "do nothing" time.

GLORIA, I haven't tried the zucchini casserole yet.  When I do, I'll let you know and I'll send it to you.  It looks pretty easy to do but I had so much stuff from my daughter's garden to use that I couldn't justify making something else.  With just me here to eat it, it takes a while and I grew up when you didn't throw food away.  If it wasn't fit for the pigs yet, we ate it.  So I find it very difficult to waste anything.

It's still raining here and we're supposed to have severe thunderstorms tonight.  That means I'll be on the sofa with a dog on each side.  Annie just shivers!  I'm watching a war movie on TV.  If the storm doesn't knock it out, maybe we'll have a battle scene to drown out the thunder.  One can hope.

Enjoy the rest of your day!

top drives me bonkers. If you don't see much of me you will know why. June

As long as we are here, let's dance.

June, sorry about your computer but hope you will have someone get you a mouse to use with your laptop..... they really are the same as your desk top when you put it on a table like the desktop & use a mouse.  I don't even have a big one anymore.  Everyone would miss you.   :tissue:

Well, the rest of the story about that darn hamburger~~  what do you get when you mix chili & spaghetti?  Had both big pots cooking at the same time, kept adding different spices & "stuff"... slipped up when adding some catsup to the chili & put it in the spaghetti sauce.... Caught myself before too much so just a little sweeter than normal.  Added a little more Italian seasoning & when I taste tested, I cut a roll in half, buttered & toasted it in the skillet I had sauted oinions in (more butter). Added garlic powder to the roll & kind of canceled out the catsup.  Hey, can't win 'em all........... I had more pots & pans to wash than I could pile up so had to put away as I washed & dried each. Not going to do this again if I can remember how much WORK it is!  Joan would be dishing out demerits fast & furious!  The chili is really good & doubt if anyone will notice the difference in the spaghetti.

Bedtime, mow day tomorrow so up early to feed cats & unlock gates. God Bless, sweet dreams to all. I'll be glad when summer is over.

Denver

Good evening.....

Storm warnings again tonight, but thankfully we must have been on the edge as it was not bad at all.

Brian came over this morning to help Bob install a new Nest Camera on the front of our house.  While they were doing the work I was sitting out there supervising.  Three neighbors came over to see what they were doing.  It was good to catch up on how everyone is doing.   We also bought one for the back, but it is going to require special wiring, so the task did not get done, but we know where it is going to go.

Loving the ability to see and add recipes, thank you, BUBBLE.

JUNE, sorry to read you are without your computer.  I hope you can at least check in and let us know you are OK.

Oh my, SHIRLEY.  Seems you really had too many irons in the fire with all your cooking.....a little ketchup for this and a little ketchup for that surely did not ruine any of the meals.

GLORIA, seems you might have to hook up your camera yet!  Do you feel it is a problem in your building or the entire community?  That is a long time outage....seems unnecessary!

LARRY, we did have a lot of flooding again last night in the metro area.  One lady drowned in a basement apartment where she was there feeding a friend’s pets.  The water just came in too fast and she just could not get out.  Another lady just barely got out of her car before in fell into a sink hole.  Frightening stuff.

Need to get this posted.

Pleasant dreams to all.
