They are also called endpapers, Bubble. I hound this very nice illustration of all the parts of a book as well as a video. https://www.ibookbinding.com/blog/book-anatomy-parts-book/ Hand binding books is something of a hobby these days, but I never got around to trying it myself. There is a company in the Harrisburg area that still offers hand-binding services.
