Tome,  yes - after the sandwiches are made and brushed with topping - place a sheet of foil over the entire cookie sheet (don't "tuck it around") and let them set for at least an hour before baking so the melted butter etc. can be absorbed.
I leave the foil over the top while baking the sandwiches but it probably isn't necessary.

Tomereader1

Thanks, Callie!  Cleared that up in no time!  I thought I was just being "dense".

CallieOK

Would have been more clear if I'd said "over the top of the sandwiches".  Sorry 'bout that.

Tomereader1

Just took the batch out of the oven; smells delicious.  Will taste later.  I ate some squares of meat and cheese while prepping, so not hungry right now.  Thanks for your recipe and instruction!  Hope the weather is being kind to you up there in OK.

CallieOK

I also made some late this afternoon.  Used Havarti cheese instead of Swiss.  It's hard to resist nibbling on the meat/cheese while prepping, isn't it?  Supposed to be wet and cold tomorrow.  I'll probably have tomato bisque soup/sliders for lunch.  Care to join me?  :)

JeanneP

Those sliders do sound good. Going to make some and freeze. Nice to have ready for fast meal with soup these cold days.

JaneS

Those sliders have become a staple in this house!  Frankie likes them too.

Be nice if that recipe for sliders could be put up in the indexes that Larry started. I aim to try them. Just need a crowd of people as don't want to freeze.
JeanneP

CallieOK

Jeanne, the sliders freeze well.  Just wrap each one tightly in foil and they should fit in the bag the buns came in. Unwrap however many you want and microwave about 45 seconds to thaw and heat.

I just cut back on this recipe .Make for 2 people in small Crock pot

Here is another great Crock Pot breakfast!

Slow-Cooker Omelet Casserole

"This is a sausage omelet for many, made all at once! It's great to make ahead of time at holidays or on vacation — just mix it, set it and go to bed." -Shawn C.

Ingredients:
26 ounces frozen hash brown potatoes
1 lb sausage, cooked and crumbled
2 cups mozzarella cheese, shredded
1/2 cup parmesan cheese, shredded
1/2 cup sun-dried tomato, julienne cut
6 green onions, sliced
12 eggs
1/2 cup milk (or half and half)
salt and pepper, to taste
1 pinch cayenne pepper

Directions:
1 Spray a 6 quart slow cooker with cooking spray or use a slow cooker liner (reynolds makes these) Layer 1/2 of the potatoes on the bottom of slow cooker, half of the sausage, 1/2 the mozzarella and Parmesan cheese, 1/2 the sun dried tomatoes and green onion. Repeat with the remaining half of the same ingredients.
2 Beat eggs, milk, salt and pepper and cayenne in large bowl with a wire whisk until well blended.
3 Pour evenly over potato-sausage mixture.Cook on low setting for 8 hours or on high setting for 4 hours or until eggs are set.

Now do you use a whole slice of the ham and fold it over into a square same size as cheese? I am thinking could just make in a French baguette or loaf and slice
JeanneP

CallieOK

I use a whole slice and fold to fit the bun. I cut a square of cheese into fourths and put that on top of the meat....but that's your choice.  Really no particular way to put them together.
Do brush the topping over the sandwiches.  Son tried drizzling it and that didn't work too well.

Amy

Callie, I brushed the ones I made and will definitely be making them again. We really enjoyed them at lunch time with a bowl of  soup. Thank you again for the recipe.

Mary Ann, here is a recipe for jam .I don't know where it got its name but it is good!!

Heavenly Rhubarb Jam

5 cups of rhubarb  chopped fine
4 cups of sugar
1  -  20 oz can  of crushed pineapple
2 packages strawberry jello.   I like mine a bit thicker so add 3 pkgs.

Mix first 3 ingredients and boil 20 min.Stir in jello until dissolved and cook 5 min.
Bottle in hot sterilized jars.
Put in fridge after opening.

Someone was asking about a salmon recipe from Larry Hanna's index and the links were not working.
Thanks to Michael, all has been righted and is available.  Thank you Michael!

JeanneP

So Glad that Larry did that Index. Wish was a way to add to it. Not that we get many people in the Recipe Forum anymore.

There is also a link to the original recipe forum from 2016 to 2019 and the reason few post recipes anymore is twofold. One people here rarely cook for themselves and two rarely go to a recipe site in S&F.

Here is a link to "What's For Dinner."

ANGELFACE, if all goes according to plan, I'm travelling up your way in July!  My daughter and granddaughter are taking me on the cruise from Seattle and we're doing some land trips along the way.  I don't have any details yet so I don't know what questions to ask or where we'll be but I'm excited to be going there.  After this trip, I will have visited all 50 states.  I hope they don't decide to annex another one before I'm gone!

Jane, I think it won't be easy, but try to get to Fairbanks where Angelface/Patricia lives.  The area is lovely and you will be amazed at the sizes of the vegetables and flowers.  I had never been to Alaska and I loved it.

These are my favorite brownies ever! They are from FineCooking.com. Yes, there's a lot of preparation but it is more than worth it! :smitten:

A minty buttercream gets sandwiched between two layers of chocolate goodness: a chewy brownie and a rich ganache. The crème de menthe gives the buttercream the perfect hint of holiday green.

Ingredients:
For the chocolate base:
  • 4 oz. (8 Tbs.) unsalted butter; more for the pan
  • 8 oz. bittersweet chocolate, chopped
  • 1 oz. (1/4 cup) Dutch-process cocoa powder
  • 5 oz. (1 cup plus 2 Tbs.) all-purpose flour
  • 3/4 tsp. table salt
  • 1/2 tsp. baking powder
  • 4 large eggs
  • 1/2 cup canola oil
  • 1-1/2 cups granulated sugar
  • 1/2 packed cup light brown sugar
  • 2 tsp. pure vanilla extract

For the buttercream:
  • 8 oz. (16 Tbs.) unsalted butter, at room temperature
  • 2 Tbs. crème de menthe
  • 1 tsp. pure vanilla extract
  • 1/2 tsp. pure peppermint extract
  • Pinch table salt
  • 7 oz. (2 cups) confectioners' sugar

For the ganache and topping:
  • 6 oz. bittersweet chocolate, finely chopped (about 1 cup)
  • 3/4 cup heavy cream
  • 1/2 tsp. pure vanilla extract
  • Pinch table salt
  • 1/2 cup crushed candy canes or peppermint pieces

Preparation:
Make the chocolate base:
  • Position a rack in the lower third of the oven and heat to 350°F. Butter a 9×13-inch pan, then line with parchment so that the parchment hangs over the short ends of the pan by a couple of inches.
  • In a medium saucepan over medium-low heat, melt the chocolate and butter, stirring until smooth. Remove from the heat, and add the cocoa powder, stirring until smooth. Set aside to cool slightly. In a small bowl, whisk the flour, salt, and baking powder.
  • In a large bowl, whisk the eggs, oil, both sugars, and vanilla. Add the cooled chocolate mixture
and whisk until smooth. Add the flour mixture and stir until just combined. Pour the batter into the prepared pan and bake until the sides of the brownie have set, the top is beginning to crack and look glossy, and a wooden skewer or toothpick inserted in the center comes out with a few crumbs, 22 to 27 minutes. cool to room temperature on a wire rack, then refrigerate while you prepare the buttercream.

Make the buttercream:
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the butter on medium speed until smooth. Add the crème de menthe, the extracts, and the salt. Beat on medium speed to combine. Turn the mixer to low and slowly add the confectioners' sugar, mixing until combined. Beat on medium-high speed until fluffy, scraping down the bowl as needed, 5 to 7 minutes.

Make the ganache:
  • Place the chocolate in a small bowl. Heat the cream in a small saucepan until just about to boil. Pour the cream over the chocolate, and let sit for 5 minutes. Stir until smooth. Stir in the vanilla and salt. Cool to room temperature before using.

Assemble the bars:
  • Spread the buttercream evenly on top of the chilled brownie. Return the pan to the refrigerator
and chill for one hour. Pour the cooled ganache over the chilled buttercream, and spread in an even layer. Sprinkle evenly with the crushed candy. Refrigerate the brownie for at least one hour.
  • Remove the pan from the refrigerator and let sit for 10 minutes, allowing the ganache to soften slightly, before cutting into squares.
